Banana Nut & Choclate Raspberry Muscle Milk (light) muffins, an Ideal Protein Alternative

Ingredients:
 (4) scoops of your choice of Ideal Protein Alternative ( I use powder Muscle Milk Light)
2 T. Extra Virgin Olive Oil
2 eggs, lightly whisked
1 T. pure vanilla extract,
1T. extract of your choice (see below)
2 t. baking powder


Serves (2): Each serving includes 8 mini
muffins or 6 mini muffins and 1 ramekin ( I was lazy and did not want to dirty a
second muffin pan for a couple extra muffins)

Directions: Preheat
oven to 400 degrees. Mix all items together, with exception of sea salt in large
mixing bowl. Spray mini muffin pans with oil. Spoon mixture of muffin items into
3/4 of of each mini muffin mold. Bake for 8-10 minutes.

Delicious! Enjoy!

NOTE: For Bananana Nut muffins, use banana flavored Muscle Milk Light powder with 1 T. of almond extract. For Chocolate Raspberry, use Chocolate Muscle Milk Light powder with  1T of raspberry extract (instead of vanilla) and use 1 T of Walden Farms Chocolate Syrup.

2:1 recipes- Ice Cream with Mix-Ins or Ice Cream Sundae

I was scanning through Pinterest a few weeks ago, and stumbled upon an ice cream recipe. I adapted it, and made it into my own, it can even be served two ways!  I hope you enjoy it!

Ice Cream with Brownie Mix-In
 ( Serves 2; s each serving size = 1/2 restricted + 1/2 unrestricted product) 

1 packet vanilla drink mix prepared
1 T. milk
4-6 ice cubes 
1 brownie cut up into pieces


Directions:
- Mix all ingredients together in ice cream maker. Freeze for 1-2 hours. If you don't have an ice cream maker, blend ingredients in blender on low, then freeze for 2-3 minutes. 



OR  (this is my favorite option!)

Ice Cream  served with warmed Brownie and Walden Farms Chocolate Syrup ( 1 serving = 2 full packets (one restricted+ one unrestricted)

- Mix all ingredients listed above in ice cream maker, except brownie. Freeze for 1-2 hours. Remove from ice cream from freezer. Warm brownie in microwave for 25 seconds. Then, top brownie with ice cream and Walden Farms Chocolate Syrup!

Chocolate Coconut Zucchini Muffins

Here's a slightly sweet treat that will satisfy any chocolate cravings you may have and also get in some of those daily requirements of veggies! Enjoy!

                                                            Chocolate Coconut (Zucchini) Muffins

Ingredients 

 (1) Ideal Protein Crispy Cereal
 (1) Ideal Protein Chocolate Pudding ( I used Milk Chocolate)
 2 egg whites
1 tsp baking powder
1.5 tsp coconut oil
2 tsp Walden Farms Chocolate Syrup
1 pack of Splenda or Stevia
1t. coconut extract
Dash of cinammon
Dash of Sea Salt
 2 cups diced  Zucchini ( note: above picture I used my spiral veggie slicer, this was OK, since then I use my NINJA and "dice " the zucchini for a more "blended" muffin- and this is what I would recommend you do

 Instructions 
  1. Preheat oven to 350.
  2. Using a rolling pin,
    gently crush the Ideal Protein Crispy Cereal while still in the unopened
    package.
  3. Mix all ingredients
    together except for zucchini until thoroughly mixed.
  4. Then add diced  zucchini (make sure to squeeze excess water from zucchini with a paper towel)
     then  incorporate into chocolate mixture.
  5. Spray your non-stick 
    muffin pan with a non-stick spray and then evenly add your
    chocolate mix to make 12 cookies.
  6. Place in oven for 12-15
    minutes and then let cool in pan.
  
  Recipe Yields: (2) IP servings
(1) serving constitutes:
   1 serving = 6 muffins = (1)  Ideal Protein meal and
1 cup of vegetables.
